Pineapple Spice Popsicles? YES PLEASE!

These popsicles are without a doubt one of the most refreshing treats you can have on a hot summers day (or winter if you live in Australia ). A perfect guilt-free treat for those of us with a pesky sweet tooth, or those who have little mouths to feed and don’t want to resort to lollies and the resulting sugar-high aftermath. In this recipe, the pineapple juice adds a wonderful juicy sweetness and pairs perfectly with the tangy lime. These popsicles resemble those lemonade icy polls we all remember from our childhood.

Pineapple has a digestive enzyme called bromelain, which is a mixture of proteolytic enzymes. These enzymes work together to help your digestive system break down and absorb proteins from the foods you eat. Almost like consuming a cheap form of digestive enzyme, these popsicles are the perfect dessert after a protein-loaded main meal. To Create:

  • Using a high-speed blender, blend all ingredients until they form a thick juice-like consistency
  • Pour this mixture into popsicle molds with popsicle sticks (you can buy plastic molds from any discount store or most supermarkets, or just use regular wooden popsicle sticks)
  • Place the molds in the freezer overnight (or for at least 6 hours) and in the morning you will have delicious tangy popsicles ready to go!
